Here we go
Step by step:
Preheat oven to 400.
Grease muffin cups with vegan butter (like Miyoko’s).
Grind oats in high speed blender like Vitamix until floury consistency, but don’t worry if it’s not a perfectly fine grind
Place ground oats, hemp hearts, flax mix, baking powder, sugar (if you desire), lime zest in a large bowl and set aside.
Throw the pitted dates, milk, vanilla, applesauce, lime juice and egg replacer in a blender and blend until smooth. Combine blended mixture with the dry ingredients and stir until combined. Fold in the blueberries.
Pour it all in muffin pans. If you’d like you can add a quick crumble topping by combining a small handful of oats, a tablespoon or two vegan butter, and a couple tablespoons of brown sugar in a small bow. Combine until butter is completely melted and all is mixed. Then, sprinkle on top of the muffins in the muffin pan.
Bake for 20 -25 minutes.
Let cool for five or ten and enjoy.
Makes approximately 24 regular size muffins or 48 minis.
