Vegan Blueberry Lime Oat & Hemp Muffins

Ingredients


In one large bowl:

2 cups oats

2/3 cup hemp hearts

1/3 cup Linwood flax, sunflower, pumpkin & sesame seeds & goji berries (If not available, just sub more hemp hearts)

1 ½ tbsp baking powder

½ tsp cinnamon

3 tbsp brown sugar (optional) 

Zest of one lime

In your high speed blender:

¾ cup applesauce

1 tbsp egg replacer

18 Medjool dates, pitted

1 tsp vanilla extract (or ½ tsp vanilla/ ½ tsp almond extract, I find that almond extract gives you a buttery flavor)

¾ cup almond or soy milk

Juice of one lime

Last but def not least:

1 pint fresh blueberries, washed and set aside for later
