Heat oven to 400 degrees.
Grease muffin pan generously with coconut oil or vegan butter and set aside.
Place the gojis in a small bowl or cup and pour a couple teaspoons of really hot water of over them to soften them up a bit. Five or ten minutes is long enough.
Prepare the date puree by adding the eight dates to a highspeed blender or food processor with a couple tablespoons of water. (I used the water that I used to soften up the gojis.) You will have to rubber spatula the sides and blend until you have a smooth consistency.
Zest half a lemon and set aside.
