Vegan Peach and Goji Oat Muffins

Chunks of peaches and dates

Combine the oat flour, oats, pepitas, and baking powder in a large mixing bowl.

Add milk, vanilla, lemon zest, and egg replacer to the date puree in the blender and blend until thoroughly combined. Pour mixture into the dry ingredients, add peaches, gojis and the chopped dates and stir until combined well.

Pour muffin mixture into greased muffin cups and bake at 400 degrees for 20 minutes or so. Your place will smell like peach cobbler. Swoon. Stick a toothpick in a muffin to test. It should come out clean when done. Let cool in the pan for 15 – 20 minutes. 

Makes 48 mini muffins. Keep some out for the week. Freeze the rest for a quick vegan breakfast on the go or a snack.
