Vegan Peach and Goji Oat Muffins

I had some peaches. I had some goji berries. My vegan Peach & Goji Berries Oat Muffins were born.

I prefer breakfasts that really packed a nutritional punch. I don’t like anything too sweet and I want serious nutritional ROI. I like for my breakfast to energize me. After all, starting the day with the itis is no bueno.

This muffin does it all. It’s made of oats, so as long as you check your brand, they’re gluten free. Oats are known for lowering cholesterol by providing the fiber we all need.

Who doesn’t love peaches? They say summer in the most delicious way possible. They’re also full of vitamins A and C, fiber and potassium.

And haven’t you heard? Goji berries are the second coming and can basically make the blind see. OK well yeah they’re not quite all that, but they are one of the “superfoods” you may have seen hyped. Despite my semi-aversion to the term, these little tart berries are tasty and full of all the antioxidants. Rumor has it that they improve depression and anxiety too.

There’s no processed sugar in these. They are 100% sweetened with dates. That means they are a healthy sub for refined sugar that do the double duty of being sweet while providing vitamins, minerals, fiber and antioxidants.

Finally, since I know you are super concerned about the protein content (insert eye roll and smirk here), the pepitas, like nuts, are a good source. They’re also super high in magnesium which helps to regulate blood pressure and improve sleep quality. In this recipe, they add some weight and help to fill you up. I also really liked the added slight crunch.
